Copycat Ding’s Chicken Sandwich from R+D

Not everyone has a Hillstone restaurant nearby, but we do have a copycat recipe from one of our favorite Hillstone dishes - the R+D Ding’s Crispy Chicken Sandwich!!

Ingredients:

Chicken Breast

Breadcrumbs
Flour
Eggs
Swiss cheese
Sandwich bun of your choice
Tomato
Kale
Green cabbage
Olive oil
Sesame oil
Garlic powder
Dijon mustard
Maple syrup
Rice wine vinegar
Salt and pepper

Instructions:


For the breaded chicken, butterfly the chicken breast and pound it thin. Season it with garlic powder, salt & pepper. Drench in flour then egg then breadcrumbs and set aside.

For the slaw, finely chop the kale and massage with olive oil. Finely chop the green cabbage and combine both together. Set aside and get started on the dressing. Combine olive oil, sesame oil, rice wine vinegar, dijon mustard, maple syrup, garlic powder and salt & pepper. Whisk together and pour over slaw mixture. Store in fridge for the remaining preparation.

Preheat large pan to medium/high heat with olive oil. Fry chicken 3-4 minutes on each side until crispy outside. Butter the sandwich buns and toast on a large pan or in the oven.

Then assemble the sandwich! First the bun, breaded chicken, kale slaw, slice of cold swiss cheese and a slice of tomato. Enjoy!!
