Sweet Potato Irish Stew

You are going to fall in love with this healthy and versatile dish.  It is great as a side to beef, chicken or pork, not to mention a stand alone served over rice or quinoa.  If serving as a side, reduce the liquid by cooking uncovered after adding beans. 

Serves: 6-8

Prep time: 20 minutes

Cook time: 50 minutes

2 tablespoons olive oil

1 large onion chopped

2 yellow, orange or red bell pepper chopped

2 medium sweet potatoes, cut into 1/2” cubes

1 jalapeno pepper, seeded and diced

2 tablespoons minced garlic

1 teaspoon dried basil

1 teaspoon dried thyme

1 pinch cayenne

1 teaspoon salt

½ teaspoon pepper

1 cup dark beer

1 15 oz. can good quality diced tomatoes

1 cup beef stock

1 8oz. can tomato sauce

1 15 oz. can navy beans rinsed and drained

Heat oil in a large stock pot.  Add onion and peppers cooking over medium high heat until tender.  Add garlic, jalapeno, sweet potatoes and seasonings.  Sauté for about 5 minutes and add tomatoes, tomato sauce, beer and stock.  Cover and simmer 30 minutes. Add beans and simmer about 10 minutes.
